Preparation time: 15 minutes.
Cooking time: 1 hour.
INGREDIENTS
- 2 kg Octopus
- 200 g Olive Oil
- Juice of 2 Lemons
- 5 middle sized Pickled Gherkins
- 2 Green Peppers
- 100 g Tomato
- 10 g Thyme
- Salt
PREPARATION
- Pound the octopus (one or more) vigorously, then put in a deep pot and cover the octopus with water: add salt and boil for one hour.
- After the octopus is cooked, clean and cut into thin strips.
- Dice tomatoes, green pepper and pickled gherkins, then add olive oil, salt, lemon juice – and serve.
